 One Pan Spinach and Artichoke Orzo Bake

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, chopped
  • 1 shallot, chopped
  • 2 tablespoons fresh basil, chopped (or 2 tsp dried)
  • 1/2 teaspoon paprika
  • ¼ roasted chili flakes
  • kosher salt and black pepper
  • 1 pound dry orzo pasta (can also use ditallini)
  • 2 jars quartered artichoke hearts (remove any woody pieces and cut into smaller pieces)
  • 1/2 cup basil pesto
  • 3 cups baby spinach, chopped
  • 3/4 cups shredded mozzarella cheese
  • 3/4 cup shredded fontina cheese (or more mozzarella)

Instructions

1.                   1. Preheat the oven to 400° F.

2. In a 9×13 inch baking dish, combine the olive oil, garlic, shallots, basil, paprika, chili flakes, salt, and pepper. Add the dry orzo, artichokes, and pesto. Pour over 2 1/4 cups of water and stir to combine. Place the spinach on top. Bake for 20 minutes, until most of the water has cooked into the pasta, but not all of it.

3. Stir the pasta around, then sprinkle the cheeses overtop. Bake another 10 minutes, until the cheese has melted and the sauce is bubbling. If there's a lot of oil from the pesto on top, drain off the excess. Top with fresh basil!

French Onion Chicken

 French Onion Chicken


Ingredients
  • 2 large Sweet Onions (sliced)
  • 4 Tablespoons Butter
  • (1) 14-ounce can Beef Broth
  • 4 Chicken Breasts (pound to uniform size)
  • 2 Tablespoons Olive Oil
  • 1-2 teaspoons Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Thyme
  • 1 1/2 Tablespoon Cornstarch (or Flour)
  • 4 Slices Provolone Cheese
  • 4 Slices Swiss or Mozzarella Cheese
  • Parsley or Fresh Herbs to garnish
  • 1/2 cup Shredded Parmesan Cheese (optional)

Instructions

  • Preheat oven to 400 degrees. Heat oven-safe skillet over medium-high heat.  Add butter to skillet and let melt. Add sliced onions and stir around to coat with butter. Continue to cook, stirring often, for about 15 minutes or until onions are translucent and softened. 
  • Meanwhile, sprinkle chicken breasts with olive oil, salt, pepper, and thyme. Once onions are done cooking, remove onions from the skillet and set aside.  Place chicken breasts in pan and cook for 5 minutes per side.  
  • Remove chicken from skillet and place on a plate. Cover with a paper towel to keep warm.  Return onions to skillet and sprinkle the cornstarch or flour over onions. Stir. Pour in beef broth and use a whisk to stir the mixture and make sure the cornstarch is completely dissolved. 
  • Once it is thickened, add the chicken back into skillet and spoon sauce all over the chicken. Top one slice of provolone cheese and one slice of Swiss cheese over each chicken breast. Transfer oven-safe skillet to preheated oven and cook for 8-10 minutes, or until the cheese is melted and chicken is cooked through. 
  • Spoon sauce and onions over the chicken. Garnish with parsley or Italian herbs.

One Bowl Brownies

 One Bowl Brownies

Ingredients

Brownies:

·         1 cup unsalted butter, melted

·         ½ cup unsweetened cocoa powder

·         2 cups sugar

·         4 large eggs

·         1 teaspoon vanilla

·         2 cups all-purpose flour

Chocolate Frosting:

·         2 Tbsp butter, softened

·         4 tablespoons of milk, cream or half & half to thin

·         2 ½ cups unsweetened cocoa powder

·         1 ½ cups powdered sugar

 

Instructions

Brownies:

1.        Preheat oven to 350° degrees and place rack in center of oven. Line a 9x13-inch baking dish with parchment paper.

2.        Place the melted butter and cocoa powder in a large bowl. Whisk until smooth.

3.        Add the sugar. Mix until blended well, then add eggs and vanilla. Mix until smooth.

4.        Using a large spoon or spatula, fold in flour, just until flour disappears.

5.        Spread the batter into the prepared baking pan and spread out evenly.

6.        Bake 25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs attached. Do not over bake. Remove from oven.

Chocolate Frosting:

1.        While the brownies are baking, make the frosting.

2.        Beat together all the frosting ingredients in a bowl until smooth. After the brownies have cooled for 30 minutes, pour frosting over warm brownies and spread gently. Let cool completely before cutting and serving.
