Banana Oatmeal Pancakes
Ingredients

½ cups old-fashioned rolled oats

6 teaspoons baking
powder
·
3/4 teaspoon salt
·
3 teaspoons ground
cinnamon
·
6 medium
ripe bananas
·
1
½ cups milk, room temperature (non-dairy milk
works too)
·
3 teaspoons pure
vanilla extract
·
6 large
eggs, room temperature
·
3
Tbsp brown sugar
Instructions

In a medium bowl, whisk together
rolled oats, baking powder, salt and cinnamon. Set aside.

In the container of a blender, add
bananas, milk, vanilla and eggs. Blend until smooth. Add dry ingredients and
blend again until smooth. Keep batter in the container while preparing the
griddle.
·
Place a pancake griddle over medium-high
heat. Cook until bubbles show. Flip and cook until done inside.
·
Serve with maple syrup.
