Banana Baked Oatmeal

Baked oatmeal is one of my favorite breakfasts.  This is a new recipe that we tried this morning and everyone loved it.  If you want a crispier baked oatmeal, bake it in a 9x13 rather than a 9x9.
Side note to Becky: The baked oatmeal we had when you visited last summer was off, so don't judge all baked oatmeal by that weird one... ;)

Banana Baked Oatmeal
·         3 cups oats
·         ½ cup packed brown sugar
·         2 teaspoons baking powder
·         ½ teaspoon salt
·         2 teaspoons ground cinnamon
·         2 eggs
·         1 cup milk
·         1 banana
·         1/2 cup butter, melted
·         Additional milk, warmed
·         Jam, optional
Directions
·         1. Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. In another bowl, use hand mixer to blend eggs, banana, milk and butter. Stir into oat mixture until blended.

·         2. Spoon into a greased 9-in. square baking pan. Bake 40-45 minutes or until set (move to higher rack for the last 10-15 minutes so the top gets crispier). Serve warm with milk and strawberry jam spooned on top.  Yield: 9 servings.
