Chocolate Chip Cookie Dough Brownies

These are super rich - and delicious!

Chocolate Chip Cookie Dough Brownies


Brownie Layer:

¾ C (1 ½ sticks) unsalted butter

1 ½ C semisweet chocolate chips

1 C. granulated white sugar

½ C. packed light brown sugar

4 large eggs

1 tsp. Vanilla extract

½ tsp salt

1 C. all-purpose flour


Cookie Dough:

¾ C. (1 ½ sticks) unsalted butter, at room temperature

¾ C. granulated white sugar

¾ C. packed light brown sugar

¼ tsp Salt

2 Tbsp milk or cream

1 ½ tsp vanilla extract or vanilla bean paste

1 C. all-purpose flour

1 C. miniature chocolate chips

Additional miniature chocolate chips for garnish, if desired


Prepare the brownie layer:

Preheat the oven to 350°F.  Spray a 9x9-inch pan with nonstick spray, then line with parchment paper.  Spray the parchment paper with nonstick spray, too.

In a microwave safe bowl, melt the butter and chocolate chips, 30 seconds at a time, stirring each time, until chocolate is melted and smooth.  Whisk in the sugars, then the eggs, vanilla and salt.  Sift flour into the bowl and stir until combined.  Scrape the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.  Place the brownies in the refrigerator to cool.


Prepare the cookie dough layer:

In a large bowl, use an electric mixer to combine the butter, sugars and salt until soft and creamy.  Mix in the milk and vanilla.  Add the flour and mix until combined.  Stir in the chocolate chips.  Spread the cookie dough over the cooled brownies and sprinkle the top with additional chocolate chips, if desired.  Cover the brownies with plastic wrap and chill until firm.  

When ready to serve, use the parchment paper to lift the brownies from the pan and onto a cutting board and cut into desired pieces.
